So, if I would use 45mm offset instead of 35mm that means the wheel would be 10mm further inboard, right? I'm thinking this would provide a little more clearance when wheels fully turned. I think this because the wheel/tire would be closer to the pivot point. Do you know what the clearance is from the inner tire edge to frame (or whatever it would hit)?
After seeing yours I'm leaning towards 245/70R17 which are exactly the same diameter as yours, but 20mm narrower. I would be fine with the fit you achieved, in fact I'd say it's perfect, but I'm going a bit narrower since I'm all about a tall sidewall and not necessarily traction.
