I am considering some of the same accessories for the same reasons as you.
Leather steering wheel cover - I have added these to my last two vehicles. I thought I would wait to see how the stock steering wheel feels before jumping on this.
Seat covers - I purchased these covers (made for pets) which I can quickly throw on when I am going camping to protect the seats from all the stuff (sometimes wet) that I put on the seats:
For rear seats
For front seats
Floor liners - The dealer threw in the all-season mats, so I'll probably stick with those.
License plate holders - I purchased these, which are inexpensive and functional. If they don't work out, I won't feel bad ditching them:

Window deflectors - I am considering deflectors for the same reason as you (ventilation while sleeping in the back, possibly while its raining). Is there an advantage of the WeatherTech deflectors over the Honda deflectors? If they can be easily put on/taken off, that is a big advantage.
Running Boards - TBD, probably the die-cast ones if I do it.
